Three Ingredient Appetizer

Three ingredients, yes it is so!  These appetizers are SOOO good!


2 packages Filo shells (30 total)
1 tub whipped cream cheese
1 jar hot pepper jelly

Preheat oven to 400 degrees.  Place the shells in mini muffin tins or together in a pan so they do not shift.  Scoop 1/2 tsp of cream cheese in each shell.  Bake for 5-7 minutes, or until cheese starts to melt.  Remove from oven and spoon 1/4 tsp of pepper jelly on top.  Serve immediately.

Easy, cheesy, spicy all in a mini shell, what more could you ask for?

Ultimate Pimento Cheese

Yummy in the tummy!

4 ounce cream cheese
1/2 cup sour cream
1/2 cup mayonnaise
garlic salt
black pepper

With electric mixer, cream cream cheese.  Add sour cream, mayonnaise, garlic salt.

Stir in:

2 cups sharp cheddar cheese, shredded
1 cup pepper jack, shredded
3/4 cup Parmesan cheese, shredded

Mix well.

Stir in 4 oz chopped pimentos (small jar).  Refrigerate for 30 minutes before serving.

Oreo Cream Cheese Poundcake Cupcakes

Adapted from Allrecipes...

1 1/2 cup butter softened
3 cups sugar
1 8oz package cream cheese, softened
6 eggs
3 cups all-purpose flour
1/2 tsp baking powder
1 cup crushed oreos, approximately 14

Cream together butter, sugar and cream cheese in a large bowl.  Add eggs, one at a time, mixing well after each egg.  Add flour and baking powder, mixing well after.  Fold in oreos.  Place in paper lined cupcake pan.  Bake at 325 degrees for 20 minutes or until toothpick inserted is clean.  Make approximately 24 cupcakes.

Taco Soup

Can you say yum!?

1 lb hamburger
1 packet taco mix
1 carton (16 oz) beef broth
1 can whole kernel corn, drained
1 can black beans, drained and rinsed
1 jar mild salsa or 2 cans Ro-tel tomatoes

Brown hamburger over medium-high heat until no longer pink.  Drain.  Add taco mix and cook for 2 minutes longer.  Place hamburger in stock pot and add next ingredients.  Cook over medium heat for 30 minutes.  Serve with tortilla chips.

Cajun Chicken Pasta

2 boneless, skinless chicken breasts, cut into strips or bite-sized pieces
1 small onion, chopped
1 small green pepper, chopped
1 medium tomato, chopped
2 cloves garlic, chopped
1 tablespoon olive oil
2 tablespoon Old Bay seasoning
1 teaspoon black pepper
1 8oz block cream cheese, cut into pieces
1/2 cup Parmesan cheese
1 cup milk
16 oz pasta of choice

Saute the chicken on medium-high heat in the olive oil until no longer pink.  Add onion, green pepper and garlic.  Cook the vegetables until soft and blackened for flavor.  Add the Old Bay seasoning and pepper.  Meanwhile cook the pasta according to package.  Turn heat to low and add the cream cheese, Parmesan cheese and milk.  Cook until cheeses are melted, stirring frequently.  Mix cooked pasta and tomato, stirring to coat.   May add additional seasoning if desired.

Crock Pot Roast Chicken

1 roasting chicken
1/4 cup margarine
4 cloves garlic, peeled and whole
1/4 onion
spices for seasoning...I use salt, black pepper, red pepper, paprika and rosemary

Remove neck and guts from chicken.  Rinse and pat dry.  Crumple 4-5 pieces of aluminum foil (size of ping-pong balls) and place in crock pot.  Rub garlic on chicken and stuff the garlic and onion in the cavity.  Liberally rub the chicken with margarine and spices.  Cook high one hour and low for 6-8 hours.  Serve warm or can use in recipes.  You may strain the broth and use for a gravy.

Southwestern Quiche

6 strips bacon, cooked until crispy
1/2 onion, chopped
1/2 green pepper, chopped
1 clove garlic, crushed
3 eggs
1/3 cup milk
1/2 cup cheddar cheese, grated
1/2 cup pepper-jack cheese, grated
1 pie crust, thawed
salt and pepper to taste

Cook bacon in frying pan until crispy.  Drain on paper towels and chop.  Saute onion, pepper and garlic in bacon grease until brown.  Drain if necessary.  Whisk eggs in bowl and add milk and cheeses. Add bacon and vegetables.  Salt and pepper to taste.  Pour in pie crust.  Bake at 375 degrees for 30 minutes.  Makes 4 generous servings.
